THE ORIGINS OF ORGANIC BREAD
Organic Bread is prepared with organic cereals grown in organic soil. Organic bread is made from flour obtained from wheat (or other grains, for example in spelt bread or rye bread) which is not treated with synthetic pesticides, resorting only to those few additives which are allowed and avoiding any enzymes from genetically modified organisms. The goodness of the bread, whether it is pugliese, traditional or homemade bread, essentially depends on the quality of the flour that comes from crops which are not produced using excessive nitrogen based fertilizers, and also that the flour has only recently been ground.
